You can actually reclaim your original horse, Pebbles! Travel to Semine in the south and speak with the horse trader. However, he won't simply hand her over. You'll need to either pay him Groschen, persuade him, or intimidate him into relinquishing Pebbles. My experience involved progressing through the main questline and working with Radovan the blacksmith. This allowed me to acquire new clothes, giving Henry a more noble appearance, which convinced the trader to return Pebbles without payment, although my reputation in Semine suffered slightly. If persuasion fails, you'll have to pay the required Groschen.
How to Steal a Horse
Alternatively, you can acquire a horse through less… legal means. While wild horses are rare, you'll find them on farms and in stables. This means stealing one and risking the consequences.

I recommend heading to Vidlak Pond in the west. A farmhouse belonging to fishermen provides two readily available horses. Simply mount one and ride away.
Afterward, visit the Nomads' Camp east of Vidlak Pond and speak with the horse trainer NPC. He can teach you how to saddle and tame your newly acquired steed, though you'll need to pay for his services. Alternatively, you can forgo this step and ride your stolen horse as is.
